White Gravy
5 T Unsalted Butter (margarine sucks for this recipe)
4 T All purpose flour
2 C Vitamin D Milk
½ t Salt (or to taste)
1 t Black Pepper (or to taste, I use way more)
Stir constantly, DO NOT stop stirring at any time! I think most people use a whisk for gravy, I don't, I use a flat edge spatula.
Melt butter over low heat in a small saucepan. Remove from heat, combine flour into the butter until it is smooth. Add about 1/2 of the Salt and Pepper. Place back on low heat. Cook the flour until it is light brown (a little lighter than peanut butter)
Add ½ of the milk and increase heat to medium. Be sure to keep your gravy smooth, combine ingredients well. Bring your mixture to a light simmer, keep stirring!
Add the rest of your milk, stir and combine well, remember to keep it smooth! Continue to cook over medium heat until your gravy thickens to slightly thinner than you wish it to be. Remove from heat. Did you stop stirring? Well don't! Continue stirring until your gravy has finished thickening to the consistency you wish it to be.
Taste, adjust Salt and Pepper if need be. Pour into your gravy boat.
