Crockpot Carnitas (my version)

This is one of the meals I prepare as Freezer Meal. I have everything bagged and ready to go, I thaw the meat the day before. Works out great since I work 12 hour shifts.
This is one of my families favorite dishes! It is good with pork, beef or chicken (we favorite them in that order).
I have used the meat to make enchiladas, burritos, tacos, tostados, tamales...
3 lb Pork Carnitas (most markets have them labeled for carnitas) (Chicken or Beef works great too)
6 t Minced Garlic
4 T Cumin
4 T Dry Adobo Seasoning
2 t Garlic Powder
16 oz Chicken Broth
12 oz Chipotle Chilies in Adobo Sauce (you can use the smaller 7 oz can for less heat)
4-6 Bay leaves
To Taste Salt
To Taste Pepper
For the Freezer...
Bag 1: Prepackaged Pork Carnitas
Bag 2 : Snack: Cumin, Dry Adobo Seasoning, Garlic Powder, Bay leaves
Refrigerator: Minced Garlic
Pantry: Chipotle Chilies in Adobo Sauce, Chicken Broth
Season the carnitas with salt and pepper. In a large sauté pan on medium-high heat, brown pork on all sides for about 10 minutes. Place the pork into the crockpot. Pour the chicken broth into the sauté pan and while heating the chicken broth, loosing the pieces of meat that stuck to the bottom of the sauté pan (they have lots of flavor). Pour everything from the sauté pan into the crockpot over the pork. Add the garlic, cumin, adobo seasoning, garlic powder, Chipotle Chilies and Adobo Sauce and the bay leaves to the crockpot.
Cook on low for 8 hours or high for 5 hours.
Remove pork from crockpot, shred pork using two forks and combine is a small amount of the juices from the crockpot.
Save the juices from the crockpot, it makes a great Mexican stew or soup base!
